Shopping list

  • 8 ounces (half a box) PastaPantry
  • 12 ounces Chicken (boneless thighs or breasts)Meat
  • 3 cups Frozen broccoliFrozen
  • 2 tablespoons Olive oilPantry
  • 1/2 cup Shredded cheeseDairy
  • 1 teaspoon, plus more for pasta water SaltPantry

Do this

  1. 1Fill a saucepan about 2/3 with water. Add a big pinch of salt. Bring to a boil on high (you will see big bubbles).
  2. 2Add pasta. Set a timer for 1 minute less than the box says. Stir once so it does not stick.
  3. 3While that cooks, cut chicken into 1-inch pieces on a cutting board. Wash the board and knife with hot soapy water after — raw chicken stays on that board.
  4. 4Heat a skillet on medium-high with 1 tablespoon oil. Add chicken and 1/2 teaspoon salt. Cook 6–8 minutes, turning, until the insides are white, not pink.
  5. 5In the last 3 minutes of pasta time, dump frozen broccoli into the pasta pot. It cooks with the noodles.
  6. 6Drain pasta and broccoli (save a splash of the water if you can). Toss with chicken, remaining oil, cheese, and a pinch more salt. If it looks dry, add that splash of pasta water.
  7. 7Taste. If it is bland, it needs salt, not more cheese. Box leftovers for tomorrow.
