Shopping list
- 1 pound Ground turkeyMeat
- 1 can (15 oz), rinsed Canned black beansPantry
- 1 cup SalsaPantry
- 1/2 cup WaterOther
- 1 tablespoon Olive oilPantry
- 3/4 teaspoon SaltPantry
- 1/2 cup, for serving Shredded cheeseDairy
Do this
- 1Heat a saucepan or deep skillet on medium-high. Add oil, then turkey. Break it up. Cook 6–8 minutes until no pink remains.
- 2Add salsa, rinsed beans, water, and salt. Stir. It should look like a thick soup, not dry meat.
- 3Turn heat to low so it gently bubbles (not a violent boil). Lid on if you have one. Cook 20 minutes, stirring every 5 so the bottom does not stick.
- 4Taste. Want it soupier? Add a splash of water. Want it thicker? Lid off, 5 more minutes.
- 5Serve in bowls with cheese. Cool leftovers, then fridge in containers — up to 3 days. Reheat until steaming.
