Cook Once, Eat Three Times
Buy one package of chicken. Cook it once. Turn it into tacos, a rice bowl, and pasta so you are not starting from zero every night.
- 1. Buy one package of chicken — about 1.5 to 2 pounds, thighs or breasts, whatever is on sale.
- 2. Cook the whole package once on a sheet pan. That is dinner number one plus leftovers.
- 3. Night two: tacos. Night three: rice bowl. Night four if you still have some: pasta.
