- 1/4 cup Shredded cheeseDairy
- 2 tablespoons SalsaPantry
- 2 tablespoons (optional) Plain Greek yogurtDairy
- pinch SaltPantry
Do this
- 1Wash the potato. Stab it 6–8 times with a fork. This lets steam out so it does not burst in the microwave. Do not skip this.
- 2Microwave on a microwave-safe plate, 4 minutes. Flip. 3 more minutes. A medium potato is usually done at 7. If a fork does not slide in easily, 60 more seconds.
- 3Let it sit 1 minute — it is lava inside.
- 4Split it open. Fluff the inside with a fork. Salt. Add cheese so it melts, then salsa and yogurt.
- 5If you have leftover chili or chicken, that goes on top and this becomes an actual dinner.
