Shopping list
- 2 large EggsDairy
- 1 large Flour tortillaBread
- 1/4 cup Shredded cheeseDairy
- 1 tablespoon (optional) SalsaPantry
- pinch SaltPantry
- 1 teaspoon Olive oilPantry
Do this
- 1Crack both eggs into a bowl. Add a pinch of salt. Stir with a fork until the yolks and whites mix. No lumps of clear white.
- 2Heat a skillet on medium. Add oil. Pour in the eggs. Let them sit 15 seconds, then push them around with a spatula until they look softly set — about 1 to 2 minutes. They should still look a little wet. They keep cooking off the heat.
- 3Warm the tortilla in the empty skillet for 15 seconds per side, or 10 seconds in the microwave.
- 4Put eggs down the center of the tortilla. Add cheese and salsa. Fold the sides in, then roll it up like a burrito.
- 5If you want the cheese extra melted, put the wrap back in the skillet, seam-side down, for 30 seconds.
