Shopping list
- 2 or 3 large EggsDairy
- pinch SaltPantry
- 1 teaspoon Olive oil or butterPantry
- 2 tablespoons (optional) Shredded cheeseDairy
Do this
- 1Crack eggs into a bowl, not the pan. Fish out any shell with a bigger piece of shell — it works like a magnet.
- 2Add a pinch of salt. Beat with a fork until the color is even yellow. That is the whole 'technique.'
- 3Put a skillet on medium-low. Medium-low is less than halfway on most knobs. Add oil and let it coat the pan.
- 4Pour in the eggs. Wait 10 seconds. Drag the spatula slowly from the edges toward the center. Repeat. Do not walk away.
- 5When they look mostly set but still glossy and a little wet, turn off the heat. They finish in the hot pan. Add cheese now if you want it.
- 6If they look dry and rubbery, the heat was too high. Next time, lower it. Eat with toast, a tortilla, or a fork over the sink.
